As it stands, everyone's age (or for that matter... existence) is reflected by how old they are from today's date.  Is there a way to change the date, for example to January 1, 1972) so that everyone's age (or exisence) is referenced from that date?

Go to Tools|Options and you will find you can set the reference date to your choice of date:

Thank you for the tip, but I should have made myself clearer.  With the option you named, all individuals remain, but those born after the designated date become negative numbers.  I was hoping there was a way to cause those individuals to be automatically removed rather that just decreasing the ages.

There is no automatic way to do this, but you can achieve it fairly simply in a couple of ways:

  1. Enter your designated date as above, then go to View|Table Layout - Individuals. Sort the individuals by the Age column, and then select and delete those individuals with negative dates.
  2. If you want to delete individuals born after a certain date, but leave ages etc. referenced to the current date, then go to the same table as above, but sort on the Date of Birth column. You can then select and delete individuals born after your selected date.

In both cases individuals with no date of birth entered will not be deleted unless selected separately.
