How do I add ethnicity - Wh-German/Irish?  I attempted to add as a comment but it erased my age?

If you want the ethnicity to be visible on your family tree / genogram, I would recommend to add a Text Label (keyboard shortcut L) and type the text.  With the Text Label, you can position the text anywhere in your family tree / genogram.
