Can I create and name  emotional relationships and health problems that are not on the menu key? If so, how do I do that?

You cannot create new ones but you can change the description of existing relationships and medical conditions to suit your purposes.  This is achieved using the GenoPro Language translation feature.  See http://support.genopro.com/Topic27237.aspx for some more info.
